what to do with the rest of your fur coat

you don’t kill a cow just for the leather or a rabbit for a fur coat … so try this ……

1 rabbit jointed into 8 pieces

2 tbsp olive oil

1 onion finely chopped

1 stick celery finely diced

2 cloves garlic sliced

2 sprigs rosemary chopped

1 bay leaf

1 lemon

1 hand full green olives

250 ml white wine

300-500 ml chicken stock

salt pepper

heat oven to 180c /brown rabbit on med-high in an oven proof casserole pan and then set aside … reduce heat and cook onion and celery untill soft … return rabbit to the pan and stir in the bay leaf / zest and lemon juice / olives / wine and enough stock to cover then season with salt / pepper … bring to a simmer then put lid on and place in oven for 1 1/2 hours … remove from oven and place on the stove without the lid and simmer untill the sauce thickens slightly …

NB : you can replace the rabbit with chinchilla or mink

  1. I have tried it with hare and it is yummy. Made a lental stew on the side. Great tip!! By the way it is scorcio here and 92 % humidity!! Just jump in the pond!! Hope your leg is ok. kim xxx

    • leg is alright , work has picked up – 12 hour days , i don’t think i will be able to keep up but i’ll do what i can.. dreadfully hot here , roll on winter…………….

    • got that recipe off hugh fernly whitingstall .he dose another with winter vege , tyme , rosemary and wine but i couldn’t find it… it would be similar. go on line and and check him out……

  3. Crystal is very interested in them. Ruby not so much. Haven’t let them roam yet just got them sunday and M & G built roof over pen up behind house. Will be interesting when they finally get out. Will keep vigilant eye on the crystal dog! have had 5 eggs already. yumyum!!
